Everyone knows about Taco Tuesday, these chicken tacos are perfect for a weeknight meal. No matter how much I love tacos, if they are not super easy and fast I can’t make them during the week.

In our house Tuesdays are busy. We have school, work and after school we go see Max’s occupational therapist. We don’t get home until around 6, which is our dinnertime. Tuesday meals need to be planned well ahead of time and be easy to make in order for us to eat at a reasonable time. After such a long day we are all exhausted and dinner is the last thing I want to worry about. 

This chicken taco recipe is PEERFECT for a weeknight meal and are super easy to make. They are quick, delicious and if you are really crunched for time can be made in the crock pot.

I use boneless skinless chicken thighs in this recipe. Not only are they more flavorful but more cost effective. Chicken thighs are also less likely to dry out. If you haven’t tried chicken thighs, this is the perfect recipe for you.

Healthy Weeknight Chicken Tacos

Ingredients

  • 1 1/2 lbs Boneless Skinless Chicken Thigh Can substitute boneless skinless chicken breast
  • 1 tsp Kosher salt
  • 1/2 tsp Ground black pepper
  • 2 Tbsp Olive Oil
  • 2 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1 tsp Dried oregano
  • 1 tsp Onion powder
  • 1 tsp Garlic Powder
  • 1 cup Fresh grape tomatoes
  • 1/2 cup Diced Red Onion
  • 1/2 cup Fresh cilantro
  • 1/2 cup Pepper Jack or Queso Fresco
  • 1 Ripe avocado sliced
  • Flour or corn tortillas, warmed

Crock Pot Version (only use if cooking in the crock pot)

  • 1 cup Salsa I like Frontera brand salsa

Instructions

  1. Preheat oven to 375°

  2. Combine cumin, paprika, oregano, onion powder and garlic powder in a small bowl. 

  3. Heat a large cast iron skillet or other oven safe skillet over medium high heat. 

  4. Season chicken with salt and pepper and half of the seasoning mix. 

  5. Add olive oil to skillet. Brown chicken on both sides for about 2 minutes each until chicken is brown. Cover the pan and put chicken in the oven for 18-20 minutes. Covering the chicken will keep pan juices from evaporating

  6. When the chicken is done cooking, remove from the oven. Let chicken cool slightly and cut into small slices. Add the chicken back to the pan along with the pan juices and the rest of the spice mixture. Mix well. 

  7. Assemble the tacos on a tortilla of your choice. Add your topics and voila. Healthy Easy weeknight tacos

Crock Pot

  1. Add chicken, seasonings and salsa to your crockpot. Cook on low for 3 hour or on high for 6 hours. 

Instant Pot

  1. Brown the chicken thighs, add seasonings and salsa. Cook using Instant timing. 

Recipe Notes

* I like to cook chicken thighs a little longer than you might think because of the connective tissue.
